Pumpkin Waffles From Southern Living

Ingredients

2 1/4 c All-purpose flour

1/4 c Brown Sugar firmly packed

4 ts Baking Powder

1 1/2 ts Ground cinnamon

1 ts Ground allspice

1/2 ts Salt

1/2 ts Ground ginger

4 lg Eggs separated

2 c milk

1 c pumpkin Cooked, mashed

1/4 c Butter or margarine, melted


Directions

Combine first 7 ingredients in a large bowl. Combine egg yolks, milk, and pumpkin; add to flour mixture, stirring just until moistened. Stir in melted butter. Set waffle batter aside. Beat egg whites at high speed with an electric mixer until soft peaks form, gently fold into batter. Bake in a preheated, oiled waffle iron until crisp. One of the best waffles ever! I followed the recipe exactly. Definitely a keeper.

Very good waffles. The use of the stiff egg whites and significant baking powder created a very light and crispy waffle with large "rise bubbles". I didn't have ground ginger and only jamaican allspice so I substituted 2 ts of pumpkin pie spice which seemed just enough and subtlety spiced. I used leftover canned pumpkin puree from thanksgiving which worked fine.
