4 ts Baking Powder
1 1/2 ts Ground cinnamon
1 ts Ground allspice
1/2 ts Salt
1/2 ts Ground ginger
4 lg Eggs separated
2 c milk
1 c pumpkin Cooked, mashed
1/4 c Butter or margarine, melted
One of the best waffles ever! I followed the recipe exactly. Definitely a keeper.
teresagonzalesVery good waffles. The use of the stiff egg whites and significant baking powder created a very light and crispy waffle with large "rise bubbles". I didn't have ground ginger and only jamaican allspice so I substituted 2 ts of pumpkin pie spice which seemed just enough and subtlety spiced. I used leftover canned pumpkin puree from thanksgiving which worked fine.
