QUICK TUNA AND POTATO DINNER

This is one of those nothing fancy jiffy skillet dinners, terrific to rely on when you don't feel like cooking. Even the kids will be happy with this choice.

Ingredients

1 24-oz package frozen O'Brien potatoes with onions and peppers

1 cup milk

1/4 tsp garlic salt

1/4 tsp pepper

1 cup frozen peas and carrots

1 6-oz can tuna packed in water drained

1 1/2 cups cheddar cheese grated


Directions

1. 24 oz package frozen O'Brien potatoes with onions and peppers. Heat to boiling, stirring often to break up potatoes. 2. Cover, reduce heat to low, and simmer 10-15 minutes, until potatoes are thawed and tender. 3. Remove cover and stir in garlic salt, pepper, peas and carrots, and tuna. Cook until peas and carrots are tender and tuna is hot, 2-3 minutes. Stir in 1 cup cheese, mixing well. Sprinkle remaining 1/2 cup cheese over top. Cover and cook over low heat until cheese is melted, 2 to 3 minutes.
