Quinoa Cake w/ Greek Chicken

Ingredients

4 cloves Garlic mined

1/2 teaspoon Salt

1/2 teaspoon Black pepper

2 tablespoon Olive oil

2 teaspoon Lemon Juice

1 pound Chicken cutlets

2 packages Quinoa brown rice 90 second cooktime

1 Zucchini shred and remove water

2 tablespoon Parsley minced

1 lemon juiced

1 teaspoon Dried oregano

1 teaspoon Coriander

1/2 teaspoon Paprika

1/4 cup Olive oil

1/4 cup Feta cheese

2/3 cup Bread crumbs

1/2 teaspoon Paprika

3 Eggs whisked

8 Cherry tomatoes diced

8 Kalamata olives diced


Directions

1. Mix all chicken ingredients or marinade, 20 minutes 1a. 400, Bake 23 minutes 2. Microwave quinoa, add all other ingredients (except olive oil) to the bowl 3. Remove 1/3 of mix and add to a food processor 3a. Put back in bowl and mix 4. Each cake is 1/3 cup, heat olive oil in pan and brown cake for 3-4 minutes 5. Serve with chicken sliced 6. Garnish with diced cherry tomatoes and kalamata olives.
