Quinoa 'N Cheese

Ingredients

2 tsp olive oil

1 each leek medium white and pale green parts halved and sliced

1/2 cup diced tomato or red/green pepper

1 1/2 cups quinoa rinsed and drained

1 good pinch salt

a few grinds seasoning salt

2 cloves garlic minced

2 large Eggs

1 cup soy milk non-fat milk or milk of choice

1 1/2 cups grated Cheddar cheese more for sprinkling

Very bland

I made this last night and it was simple and good! However, there are some things that need to be tweaked in the recipe for it to be great. First, when you resize the recipe it does NOT change the amount of water called for in the directions. I forgot that and almost had a disaster. Second, everyone said that the cheese taste was not strong enough for them. Next time I will make it using sharp cheddar or pepper jack cheese and see if that is better. We shredded additional cheese to add on top along with the Panko crumbs. Since I was making this as a main course dish for vegetarians I added sliced portobello mushrooms. That's what I do like about this recipe. It can be a great base for lots of different accompaniments.
