2 tablespoons whole-grain mustard divided

1 tablespoon finely chopped shallot

1 tablespoon pure maple syrup

1 tablespoon cider vinegar

4 cups baby greens such as spinach, kale and/or arugula, washed and dried

1/2 cup cooked red quinoa cooled

1 tablespoon unsalted sunflower seeds toasted
