Ingredients

50 grams Ramps Leaves from about two bunches

50 grams Almonds Slivers, toasted in a dry pan (might be about 1/2 cup)

1/2 medium Lemon Juice (about 2 tablespoons) and zest of whole lemom

3/8 cups Olive oil

1/2 Cup Parmesan

1.5 teaspoons Salt

1 Pinch Pepper


Directions

Wash and dry ramps and tear into a large measuring cup Add zest and juice of the lemon, toasted almond slivers, and 1/2 of the olive oil Process with an immersion blender but not too smooth Mix in cheese and remaining olive oil Season to taste with salt & pepper Keeps in a jar covered with more olive oil about 5 days in the fridge and a month in the freezer A serving is about 2.5 Tablespoons
