Ingredients

2 Onions sliced

2 cloves Garlic minced

4 tablespoons Olive oil divided

2 Zucchini sliced

1 Squash sliced

2 Tomatoes chopped

1 medium Eggplant peeled & cubed

4 ounces Fresh mushrooms sliced

1 Bell pepper sliced

1/2 teaspoon Dried basil

1/2 teaspoon Dried oregano

2 teaspoon Salt

1/8 teaspoon Freshly ground pepper

4 tablespoons Parmesan cheese grated, divided

4 tablespoons Mozzarella grated

2 tablespoon Fresh parsley chopped for garnish


Directions

1. Layer large baking dish with onions, garlic, zucchini, squash, eggplant. Cover with 2 tablespoons oil, 1/4 teaspoon basil, 1/4 teaspoon oregano, 1 teaspoon salt, 2 tablespoons Parmesan. Layer tomatoes, mushrooms& bell pepper on top. Add remaining oil, basil, oregano, salt, Parmesan Cheese. Top with Mozzarella and ground pepper. 2. Cover and cook at 375 for 15 to 20 minutes. Uncover and cook 10 more minutes until vegetables are tender. Garnish with parsley.
