1. Layer large baking dish with onions, garlic, zucchini, squash, eggplant. Cover with 2 tablespoons oil, 1/4 teaspoon basil, 1/4 teaspoon oregano, 1 teaspoon salt, 2 tablespoons Parmesan. Layer tomatoes, mushrooms& bell pepper on top. Add remaining oil, basil, oregano, salt, Parmesan Cheese. Top with Mozzarella and ground pepper.
2. Cover and cook at 375 for 15 to 20 minutes. Uncover and cook 10 more minutes until vegetables are tender. Garnish with parsley.
