Beef Stroganoff

Ingredients

3 tablespoons Butter

2 Onion Large, sliced

Salt and pepper to taste

8 ounces Mushrooms Trimmed and sliced (Optional)

2 pounds Tenderloin or Sirloin cut in 1 to 1.5 inch chunks

1 tablespoon Dijon mustard

2 Plum tomatoes chopped (canned or fresh) OR

1/2 cup Tomato sauce (optional)

1 cup Beef stock

1/2 cup Sour cream

Parsley Chopped (for garnish)


Directions

1. Melt butter in a large, deep skillet on medium-high heat. 2. Add onions, salt, pepper, and mushrooms. Cook until onions are tender but not browned - 10 minutes. 3. Add beef and cook for about a minute. 4. add mustard, tomatoes, and stock. Adjust heat so mixture bubbles steadily but not violently. Cook until meat is tender - 5 minutes. 5. Turn off heat and add sour cream. 6. Taste and season as needed. 7. Serve over egg noodles or rice.
