Red Curry

Ingredients

1 tb Garlic

; onions

2 ts Paprika

1 ts Finely grated kaffir lime

1 tb Coriander seeds

4 Kaffir lime leaves

1 ts Tumeric

1/2 c Small purple shallots or 2

1 tb Chopped galangal

2 tb Chopped coriander roots and

; coriander roots

2 tb Vegetable oil

2 ts Dried shrimp paste

10 lg Dried chillies; (soaked in

1 ts Black peppercorns

; water)

3 tb Finely sliced lemon grass

2 ts Cumin seeds


Directions

First roast the coriander seeds and other whole spices seperately in a dry pan until brown and fragrant and pound to a fine powder in a mortar and pestle. In a powerful electric blender, grind all ingredients to a puree. Store in a glass jar, keep refridgerated and use as required.
