Red Lentil Dal with Sweet Potato and Spinach

Ingredients

1 1/2 cups red lentils

3 tsp ground cumin

3 tsp turmeric

1 tsp black mustard seeds

1 tsp hot paprika

1 tsp ground coriander

1/4 tsp cinnamon

1/2 tsp chilli powder (extra if you prefer more heat)

1 tsp salt

2 tbs coconut oil

1 large onion diced finely

3 - 4 cloves of garlic minced

1 tbs freshly grated ginger (about a 5 cm piece)

2 tomatoes, roughly chopped

2 cups vegetable stock or water

1 tsp honey

2 bay leaves

1 large red chilli sliced down one side

1 med sweet potato peeled and cut into a large dice (about 400g)

100 g baby spinach

coriander leaves lemon wedges and yoghurt to serve
