Rhubarb Crumble

Ingredients

5 stalks Rhubarb chopped

2 tbsp Wine (red or white)

3 oz Caster sugar

6 oz Plain flour

2 oz Brown sugar

4 oz Butter

1 oz Raisins


Directions

1. Preheat a large saucepan and preheat the oven to a hot heat. 2. Place the rhubarb, wine and sugar in the saucepan. Cook down for 5 minutes. 3. While the rhubarb is stewing, prepare the crumble topping in a large bowl. Rub the butter with the flour until it resembles breadcrumbs. Add the sugar and raisins and stir. 4. Pour the rhubarb into an ovenproof dish. Place the crumble topping on top. Finish in the oven for 5-10 minutes.

Made it today, my husband loves it! So do I, but a bit too many calories for me.

Loved the red wine addition. I also added half a cupful of oats to crumble mixture which seemed to give added substance.
