Rice and Beans

Rice and beans from Haiti with some extra added Canadian veggies and meat.

Ingredients

2 tablespoons Oil

1 cup Onion chopped

1 cup Sweet pepper chopped

1 cup Celery chopped

Ground cayenne pepper to taste

Ground black pepper to taste

1 teaspoon Dried thyme

1 pound Ham cubed

6 ounces Pork sausage sliced

4 14-16 ounce cans Red beans undrained

4 whole Bay leaves

3 tablespoons Garlic chopped

8 cups Cooked Rice


Directions

Saute veggies in oil for approx. 5 minutes. Add meat, Cook an additional 5 minutes. Add all but rice. Cook over low heat for approx. 45 minutes. Remove bay leaves. Serve over hot rice.
