Rice Noodle (Bifun) or Bean Noodle (Vermicelli) Salad

Ingredients

1 ts Chili sauce

Tamari to taste

90 g Sprouts - radish

2 Garlic

1 c Red Cabbage - shredded

7 tb Red wine vinegar

1 tb Maple syrup - optional

1 pk Bifun or Vermicelli Noodles

Coriander 15 sprigs stem

180 g Snow peas- blanched &

1 ts Seasalt

4 Strips Orange zest

Ginger - to taste

1 Red pepper - diced

1 Spring onion; (1 to 2)

1/4 c Toasted sesame oil


Directions

Place Bifun in a large bowl and pour boiling water to cover. Cover with plate and let sit until soft, about 10 minutes. Drain thoroughly and place in salad bowl. Toss in the cabbage, snow peas, pepper and sprouts. In a food processor, prepare the dressing by blending all of the remaining ingredients except Tamari. Pour the dressing over the noodles and toss. Add Tamari to taste.
