Ricotta Cheese Sauce with Pasta

Ingredients

1 1/2 cups well drained

1 teaspoon

1/2 teaspoon freshly ground

2 tablespoons

1/3 cup from cooking pasta

1/2 cup

1 pound cork screw or shells work best


Directions

In a large bowl, whisk together Ricotta cheese, salt, and pepper until well blended. Set aside. Cook pasta of choice in 4 quarts boiling water. Drain. Reserve 1/3 cup of water. Return pasta to pot. Add Ricotta cheese mixture, reserved water, lemon zest, and Parmesan cheese. Mix over low heat.
