Ricotta Cookies

Ingredients

4 cups Flour

1 teaspoon Baking soda

1 teaspoon Baking powder

1/2 teaspoon Salt

2 cups Sugar

8 ounces cubed butter room temperature

2 cups whole milk (15 oz)

2 extra large Eggs

1 teaspoon Vanilla

1 Orange Zest

1 cup Powdered sugar

1/4 teaspoon Almond extract

2-4 tablespoons milk


Directions

1. Sift together flour, baking soda, baking powder, and salt. 2. Take the 2 cups sugar and the cubed butter. Beat. 3. Add the 2 cups of whole milk and the ricotta and mix. 4. Add the 2 extra large eggs (room temp) and mix for 2 minutes. 5. Add the 1 teaspoon of vanilla. Beat. 6. Add the zest from 1 orange and mix together. 7. The add the flour mixture a little at a time. 8. Spoon by tablespoon onto parchment lined cookie sheets. Bake at 350 degrees for 12-15 minutes or until edges are slightly brown. Cool on wire racks. Once cooled 1. Mix 1 cup powdered sugar, 1.4 teaspoon almond extract, and 2-4 tablespoons milk. It should form a thick glaze. Dip the cookies to coat the tops.
