Ingredients

1 pound fingerling potatoes washed and thoroughly dried

2 tablespoons Extra virgin olive oil

1 tablespoons fresh thyme leaves

sea salt and ground pepper


Directions

Preheat oven to 450F. Toss potatoes with rest of ingredients. Bake in single layer on baking sheet until crisp on the outside and tender on the inside - about 25 minutes. Serve warm.
