Roasted Fish Fillets with Fresh Herbs

Ingredients

4 6 oz each, with skin on

1 juiced

to taste

1 crushed

1/2 cup chopped (parsley, dill, garlic, oregano, basil)

optional


Directions

Preheat oven to 375 degrees Moisten the fish with lemon juice Season with salt and pepper Mix together the garlic, herbs, and a little extra virgin olive oil to hold the herbs together. Spread the herb mixture evenly over the fish fillets. Place the fillets skin side down on a lightly oiled baking sheet and roast in the oven until cooked (they should flake easily with a fork and be opaque), about 12 - 15 minutes depending on the thickness of the fish. Serve with additional lemon wedges if desired.
