Roasted Garlic Mashed Potatoes

Ingredients

1 head Garlic Head, not separated into cloves

1 tablespoon Olive oil

1 pound Potatoes Yukon Gold, peeled and quartered

3 cups water

1/2 cup Lowfat Milk

1 pinch Salt & pepper to taste


Directions

Preheat oven to 375 degrees F Cut top off of garlic head, drissle with oil Wrap in foil and bake for 1 hour. Cool for 10 minutes Separate cloves and extract pulp. Set aside and discard skins Boil potatoes until tender, approximately 15 minutes. Drain potatoes. Heat milk in pan add potatoes, salt, pepper and beat with mixer, until smooth. Add garlic pulp and stir well Serve.
