Ingredients

4-6 bone-in, skin on chicken breasts

3 tbsp. olive oil

1 tsp. ground coriander

1 tsp. ground cumin

1 tsp. ground turmeric

1 tsp. ground cayenne

1 tbsp. curry powder or garam marsala

1 tbsp. sweet paprika

1 cup unsweetened full-fat coconut milk (I use Thai Kitchens, and I blend it first so that it is no longer separated)

Juice of 1 lemon

4 cloves garlic minced

1 tbsp. freshly grated ginger

1 tsp. salt

Fresh cilantro leaves for serving (optional)
