Roasted Winter Vegetables

Ingredients

1 1/2 lb beets peeled and chopped into chunks

1 lb yams peeled and chopped into chunks

1 lare Red onion peeled and chopped into chunks

2 large peppers (red, green, yellow, orange) chopped into chunks

1 large Butternut squash peeled and chopped into chunks

4 medium parsnips peeled and chopped

2 lbs Fingerling Potatoes chopped

2 lbs Fuji apples cored and chopped

2 lbs carrots peeled and chopped

2 tablespoons olive oil


Directions

Mix all together. Drizzle 2 tablespoons oil over vegetables. Bake 450 for 30 minutes. Turn half way through.
