Ingredients

2 pounds flank steak

1 large onion sliced

1 green pepper sliced

1 red pepper sliced

6 cups beef stock

1 tablespoon vegetable oil

1 teaspoon cumin ground

4 cloves garlic smashed

4 bay leaves

For Ropa Vieja:

1/2 cup vegetable oil for frying

1 can chopped tomatoes

1 8 oz can tomato sauce

2 cloves garlic minced

wine (red or white)

tomato paste

tobasco

1 tablespoon white vinegar add to taste


Directions

Simmer meat in broth with 1T veg oil, salt, 1t cumin, 4 smashed garlic, 2 bay leaves 1/4 onion and 1/4 green pepper until shreddable-- 2 hours. Reserve 1 cup broth Sautee the remaining onion and peppers, garlic, 2 bay leaves Add in tomatoes, sauce, wine, reserved broth to taste Add in meat, cover & simmer 15-20 minutes Add in tobasco, vinegar, salt to taste
