Heat oven to 300 degrees. Divide bread between 2 baking sheets. Bake until bread is toasted 20 min. Let cool, transfer to a bowl. Increase oven to 375 degrees. In a skillet, melt butter. Add onions, celery, salt and pepper. Cook until vegetables are soft. In a bowl, whisk together broth and eggs. Pour over bread. Add vegetables and herbs, toss.
