Rosemay Salmon with Fresh Fruit Salsa

Ingredients

2 lbs fresh salmon

1 cup fresh pineapple diced

1 cup fresh honey dew melon diced

1 cup fresh mango diced

1 cup fresh watermelon diced

1 pablano pepper minced

2 limes

1 teaspoon Kosher Salt

1 teaspoon Ground black pepper

1 bunch Fresh Cilantro ruff chop

1 bunch Fresh rosemary ruff chop

grape seed oil


Directions

Salsa Mince all friut and place in large bowl, add minced pablano, cilantro, salt and pepper and juice of 1 1/2 limes. Cover and place in refrigerator to chill. Salsa will yeild more than 2 servings. It is also great as and app in a shredded pork, beef, chicken or seafood tacos. Salmon Preheat oven to 350. Cut salmon into 1 lb steaks. Pat dry with paper towel. Drizzel with grape seed oil and rub both sides. Season with salt and pepper to taste. Sear skin side down in hot (oven safe skillet), add rosemary, place in oven and cook 5 to 10 minutes, depending on desired doneness. Serve with starch of your choice. Bon Apetite
