Rwandan Cilantro Salad

Ingredients

2-3 tomatoes

1 medium red onion very thinly sliced

1 small green pepper optional

1 bunch of cilantro

.5 cabbage, very thinly sliced optional

1 carrot, shredded

1 cucumber optional

1 avocado optional

1 Thai chilies or substitute hot peppers optional

mayo or lime & oil


Directions

Cut vegetables and arrange on platter, layering looks nice but not necessary. either mix with enough olive oil and lime juice to be through out or put on the side with mayo as a dressing. When mayo is added it makes it like a cole slaw.
