Ingredients

4 Salmon filets

1/4 cup Brown sugar

1/4 cup Maple Syrup

3 tblsp bourbon

2 tblsp Olive oil

1/4 cup Walnuts chopped

4 Green onions chopped

4 strips Bacon diced

10 ounces Baby spinach


Directions

In a small bowl, whisk together brown sugar, bourbon and maple syrup. Place salmon in a shallow dish and coat with syrup mixture. Set aside to marinate. Cook diced bacon in a medium skillet until crisp. Remove bacon pieces. Remove all but about 2 tablespoons of bacon drippings. Set skillet aside. In a small dish, combine bacon pieces, green onion and walnuts. Set aside. In a fresh, clean skillet heat oil over medium high heat. Add salmon skin side down and cook until skin is crisp. Turn and cook until done. In the same skillet used to cook the bacon, add spinach in batches - cooking until wilted. About half way thru, add the bacon green onion and walnut mixture. If desired, also drizzle a spoonful of maple bourbon sauce over spinach. Toss to heat thru. Serve salmon on bed of spinach/bacon mixture.
