SAUCY PEPPER CHICKEN

Ingredients

16 oz log cooked polenta sliced into 1/2" rounds

1/3 cup grated Manchego cheese

1 tbs oil

1 pound boneless skinless chicken thighs

1/4 tsp each salt and pepper

1 red bell pepper sliced

1 yellow bell pepper sliced

1 onion sliced

2 tbs water

1/8 tsp salt

2 cups marinara sauce

1/2 tsp paprika


Directions

Heat oven to 400 degrees. Place cooked polenta, sliced into 1/2" rounds on foil lined cookie sheet, top with Manchego cheese. Bake 20 min. Heat oil in a skillet. Sprinkle chicken thighs with salt and pepper, add to skillet. Brown, transfer to plate. To skillet, add peppers and onion, water, and salt, cook until peppers are tender. Add marinara sauce, paprika and chicken with juices, cook until done. SERVE over polenta...
