Sausage pasta with Kale

Ingredients

2-3 tblspn EVOO

1 lbs ground italian Sauage (or more)

6 cloves Garlic

150 ml White Wine

150 ml Whole milk or half/half

120 g grated Pecorino or Parm

1 large yellow or sweet onion sliced

1-2 shallots diced

Rigatoni pasta

1 bunch kale

Salt and pepper to taste


Directions

1- add oil to pan and allow to get hot (med-high heat) Add sausage to pan, browning and adding good color. 2- remove sausage from pan with a slotted spoon and set aside in a bowl. Add onion and shallot and reduce heat to medium. Allow onions and shallots to sweat and get a little color (do not allow to burn) 3- add garlic for a couple minutes, stirring regularly. 4- add white wine to deglaze pan, be sure to scrape brown bits off bottom of pan 5- cook pasta in seperate pot. 6- add a little pasta water and kale to pan, cover fir a few minutes until kale begins to wilt. 7- uncover and add milk and allow to simmer a few minutes. 8- add cheese and stir. Reduce to desired consistency. Salt and pepper to taste 9- serve over pasta garnish with nutmeg.
