Savory Baked Eggs

Can be made a day ahead and kept in refrigerator. Bake 5 - 10 minutes longer.

Ingredients

1 pound Italian sausage - hot ground

1 Red pepper chopped

1 Green pepper chopped

12 Eggs

1/3 cup Flour all-purpose

3/4 teaspoon Baking powder

12 ounces Cottage cheese

4 cups Monterey jack cheese shredded

4 ounces Feta cheese garlic & herb flavored, crumbled


Directions

Brown sausage stirring until crumbly; drain well. Sautee peppers. Beat eggs in a bowl. Add flour and baking powder. Whisk to mix. Add sausage, peppers, cottage cheese, Monterey Jack and Feta cheese. Spoon into 9x13 inch baking pan sprayed with nonstick cooking oil. Bake at 350? for 30 - 35 minutes or until knife inserted near center comes out clean.
