Ingredients

2 cups Gluten-free All Purpose Flour

1/4 cup Sugar

2 teaspoon Baking powder, gluten-free

1/2 teaspoon Baking soda

4 tablespoons Shortening, butter or vegan alternative

2 large Eggs or egg substitute

3/4 cup Vanilla yogurt (dairy or nondairy)

1/2 cup Flavoring for scones fresh or frozen berries, raisins, orange rind, chopped nuts, choclate chips, etc.

Cinnamon-sugar mixture to sprinkle on tops before baking

Parchment paper

Directions

Preheat oven to 400ºF Whisk together all dry ingredients in a large-bottom bowl. Cut shortening into the dry ingredients using a pastry cutter or two knives or simply combine in a food processor. Stir in eggs and yogurt until well mixed. Add any flavorings. Scoop heaping tablespoonfuls onto a parchment-lined baking sheet, sprinkle with the cinnamon-sugar, and bake for 10-12 minutes, or until the tops are lightly browned and there are no uncooked portions peeking through. Do not overcook!

Tasty, but the consistency is more spongy than traditional scones. I still really liked them. Happy to have a gluten-free scone-like choice. I made it with coconut sugar and it was not very sweet. I also added chopped dates which were very good, but next time I might add more.
