Seared Pork Chops with Apples and Leeks

Ingredients

4 4-oz trimmed of visible fat

1/4 tsp

1/4 tsp

2 rinsed well and chopped

2 minced

1 tsp

1 cup

2 cored and diced

1 tbsp


Directions

1. In a large skillet, heat oil over medium-high heat. Season both sides of pork with salt and pepper and place in skillet; cook 1-2 minutes per side until golden brown. Remove from skillet and set aside. 2. Add leeks and garlic to skillet and cook 2 minutes over medium-high heat until soft. Add thyme and cook 1 minute until fragrant. Stir in broth, apples and rosemary and bring to a simmer. Return chops to pan, partially cover and cook 3-5 minutes, undisturbed, until chops are tender.
