Sesame Saute - Asparagus, Mushrooms, and Celery

Roasted Sesame oil and Sesame seeds compliment the fresh vegetable goodness of the Asparagus, Portobello Mushrooms, and Celery in this healthy saute served with Spaghetti Squash.

Ingredients

1 1/2 cups Asparagus trimmed, cut into 1" pieces

8 each Fresh mushrooms halved or quartered

1 cup Celery cut into 1" pieces

2 tablespoons Roasted Sesame seeds

1 tablespoon Roasted Sesame oil

1/3 cup Onion diced

1/4 cup Garlic dried slices

2 teaspoon Ground Coriander

2 tablespoons Hemp Oil

1 tablespoon Low sodium Soy sauce

Himalayan salt to taste

Ground black pepper to taste


Directions

Cut the Asparagus, Mushrooms, and Celery, and place in a tossing bowl (or a bag) Add the Sesame seeds and oil to the bowl and toss, then set aside Dice the onion and toss with the garlic slices Heat the Hemp oil in a large saute pan or skillet at medium heat (275 degrees), stirring until onion is tender Add the tossed veggies and sesame to the saute pan Cook at 275 degrees for about 5 minutes, then reduce heat to 200 degrees Simmer for an additional 20-30 minutes until veggies are tender, stirring in the Spaghetti Squash Soy sauce, salt and pepper to taste.
