Shrimp Club Salad

Ingredients

1/2 pound Jumbo shrimp peeled and deveined

1/2 loaf Rustic bread crusts removed, cut into 3/4" cubes

1 tablespoon Extra virgin olive oil

1/4 cup Mayonnaise

2 tablespoons Fresh chives chopped

3 teaspoons Fresh lemon juice

4 slices Bacon cooked

1 heart Romaine chopped

1 pint Cherry tomatoes halved


Directions

1. Preheat oven to 400 2. In a medium pot of boiling, salted water, cook shrimp until opaque throughout (three to five minutes) 3. Drain shrimp and transfer to paper towel lined plate 4. Cover and chill 5. In a large bowl, toss bread cubs and oil 6. Remove bread cubes from bowl and spread in single layer on rimmed baking sheet 7. Bake until golden (about eight minutes), tossing halfway through 8. Stir together mayonnaise, chives and lemon juice 9. Addd salt and pepper to taste 10. Toss together shrimp, croutons, bacon, lettuce and tomatoes 11. Serve with dressing
