Shrimp in a Shot Glass

Ingredients

40 cleaned cooked shrimp chop 1/2 of the shrimp

1 guacamole dip

2 cups mayonnaise

1 cup heavy cream

4 Tbs ketchup

1 tsp paprika

1 clove garlic chopped

1/2 small red onion chopped

1/2 red pepper chopped

1/2 green pepper chopped

1 cup cucumber peeled, deseeded and chopped

3 cups tomato juice

1 Tbs extra virgin olive oil

1 tsp white wine vinegar

1/2 tsp sea salt

1/4 tsp freshly ground black pepper


Directions

Prepare the European cocktail sauce by mixing all ingredients to a smooth consistency (save a bit of the cream to use with the guacamole dip). Add the chopped shrimp and chill until ready to assemble. Prepare the Gazpacho by processing all ingredients in the blender. Chill until ready to serve. Run the guacamole dip in the blender until smooth and creamy. You may need to add some cream help thin it. To serve - fill shot glasses in layers: cocktail sauce guacamole cream gazpacho top with a shrimp
