Prepare the European cocktail sauce by mixing all ingredients to a smooth consistency (save a bit of the cream to use with the guacamole dip). Add the chopped shrimp and chill until ready to assemble.
Prepare the Gazpacho by processing all ingredients in the blender. Chill until ready to serve.
Run the guacamole dip in the blender until smooth and creamy. You may need to add some cream help thin it.
To serve - fill shot glasses in layers:
cocktail sauce
guacamole cream
gazpacho
top with a shrimp
