Shrimp in Beer

Ingredients

1 Stalk celery

3 Leeks chopped

2 lb Shrimp

3 tb Flour

2 Bottles beer

1 Bay leaf

2 Onions, chopped

3 Sprigs parsley

6 tb Butter


Directions

Simmer beer with leeks, onions, parsley, bay leaf and celery 15 minutes. Strain out vegetables. Melt butter; blend in flour. Add beer slowly, stirring constantly over low heat until thickened. Add shrimp; simmer 5 minutes until fish turns pink; season to taste with salt and pepper. From the files of Al Rice, North Pole Alaska. Feb 1994
