Shrimp Jambalaya

Prep time is extensive but the end result is amazing recipe is from the Gumbo shop in New Orleans from the 1970's on the Paper place mat

Ingredients

1/4 cup cooking oil

1/2 pound Smoked sausages sliced

1/2 pound ham cubed

1 cup White Onion chopped

1 cup Bell pepper chopped

1 cup celery chopped

1 cup green onion chopped

2 cloves garlic minced

1 16 oz can tomatoes drained - reserve liquid

1 1/2 cups Stock or Water

1 tsp Dried thyme

1 tsp Black pepper

1/4 tsp Ground cayenne pepper

1 tsp Salt

1 cup Converted Rice

1 1/2 Tbsp Worcestershire sauce

2 pounds Shrimp peeled


Directions

In a large heavy Dutch oven, saute sausage and ham until lightly browned. Remove from pot. Saute onion, bell peppers, celery, green onion and garlic in meat drippings until tender. Add tomatoes, thyme, pepper and salt. Cook-5 minutes. Stir in rice. Mix together liquid from tomatoes, stock , and Worcestershire sauce to equal 2Vl cups. Bring to a boil , reduce to a simmer, add raw shrimp, ham and sausage and cook uncovered, stirring occasionally for about 30 minutes or until rice and shrimp are done.
