Shrimp Scampi

Ingredients

1 pound Shrimp Raw, shells on

2-3 tablespoon Extra virgin olive oil

1 head Garlic divided (1/2 sliced. 1/2 chopped)

1 1/2 cup Dry white wine Chardonnay, for example

1/2 Lemon Add more to taste

1 teaspoon Italian seasoning

1/2 cup Buter softened

1 tablespoon Fresh parsley chopped

1/2 cup Pecorino Ramono Cheese grated

1/2 pound Spaghetti


Directions

Add olive oil, shrimp shells, and 1/2 the diced garlic to pan. Cook over medium heat for a few minutes, stirring occasionally to prevent the garlic from burning. Strain contents, reserving oil Add oil back to pan with shrimp. Cook over medium high heat until shrimp are cooked throughout. Remove shrimp and set aside In a pot of salted boiling water, cook pasta until just shy of al dente, about 2 minutes less than package directions While pasta is cooking, add the rest of the garlic to the pan over medium high heat. Cook until fragrant, but not browned (about 2 minutes). Add white wine and lemon juice, cooking until reduced to about 1/3rd. Reduce heat, and add Italian seasoning and butter. Stir to combine Return shrimp and juices to pan. Add parsley and salt and pepper to taste. When pasta is ready, transfer to scampi pan with tongs. Add more pasta water as needed. Plate, topped with shredded cheese, drizzle of olive oil, pepper, and parsley
