Skillet Johnny Marzetti

My mother made this on a regular basis when I was a child. Unlike traditional Johnny Marzetti this is not a casserole, it's made in the skillet. It is a quick, easy and very economical dish. Think homemade Hamburger Helper.

Ingredients

1-1 1/2 lbs Lean Hamburger

2 cloves Garlic minced

1 lg Onion chopped

1 sm - med Green Pepper chopped

1 14 oz can Tomato Sauce

2 tbs Butter or Olive Oil

8 oz Mushrooms canned or fresh, sliced

1 6 oz can Black Olives sliced and drained.

8-10 slices American Cheese

1 12 oz pkg Egg Noodles cooked


Directions

In a large skillet sautee garlic, onions and green peppers in butter or oil until slightly softened, about 5 minutes. Add hamburger meat and cook until browned. If you are using fresh mushrooms add them with the hamburger. Once hamburger is completely browned, cook a few minutes longer to remove liquid from the vegetables. Add the tomato sauce, black olives and mushrooms, if you are using the can, be sure to drain them before adding. Simmer 15-20 minutes. Add cheese slices and allow cheese to melt. While the sauce is simmering prepare the egg noodles according to package directions. Drain the noodles and add to sauce and heat through. Good side options are either corn or a side salad with garlic bread or cornbread. This is a quick dish for a week night and can the vegetables can be eliminated or swapped, making kid and/or picky-eater friendly.

This is the EXACT recipe my mother made too. Thank you so much for posting this. When i started my search for this recipe awhile ago, all them were the casserole versions and i was beginning to wonder if i would ever find the recipe that was a favorite of mine as a kid. Apparently it's not for everyone, but for me this is pure comfort food!
