Ingredients

2 lbs. Stew Beef

3 Tbs. Olive Oil

8 oz. Nitrate Free Beef Bacon – Cooked Crisp and Cho

4 Mini Bell Peppers – 2 Red 2 Orange

6 oz. Cremini Mushrooms

1 Leek

2 Ribs Celery

2 Roma Tomatoes

3 Small Rainbow Carrots

1 Medium Sweet Onion

4 Cloves Garlic – Minced

2 Cups Beef Stock – Divided

1 Tbs. Worcestershire Sauce

3 tsp. Sea Salt

1 tsp. Black Pepper

1 tsp. Garlic Powder

1 tsp. Onion Powder

1 tsp. Oregano

1 Bay Leaf


Directions

Heat slow cooker on low setting Chop vegetables and add them to the slow cooker with 1 cup of beef stock. Cover and let the vegetables sweat About 1 hour. Sprinkle stew beef with a pinch of salt and pepper. Heat olive oil in a large skillet, over medium-high heat. Once the oil is hot, add your stew beef and sear on both sides. To the slow cooker, add stew beef, bacon, remaining 1 cup of beef stock, Worcestershire, sea salt, pepper, garlic powder, oregano, onion powder, and bay leaf. Mix all the ingredients together. Cover and cook on low for 8 hours. Serve and Enjoy!
