Slow Cooker French Dip Sandwiches

Ingredients

2 1/2 lbs beef bottom round roast

1 envelope onion soup mix

1 14.5 oz French onion soup (not condensed) canned

12 oz. beer

2 cubes beef bouillon cube

coarse salt

pepper

4 french bread/rolls

4 slices provolone cheese


Directions

Trim fat from meat and place it in slow cooker. Sprinkle with onion soup mix and pour onion soup and beer over the top. Drop the bouillion cubes in different areas of the liquid and season well with salt and pepper. Cook on low for 5-6 hours. Remove meat and slice thinly. Retrun to the slow cooker and cover. When ready to serve, heat broiler. Open rolls and place a slide of cheese on one side of each; place under the broiler until cheese is melted. Using a slotted spoon, place beef on rolls. Serve sandwiches with a cup of "au jus" from slow cooker for dipping.
