Slow-cooker white bean soup with andouille and collards

Ingredients

1 pound Dried white beans Cannellini or great northern

1/2 pound Andouille sausage links Halved lengthwise and sliced

1 large Onion Chopped

2 stalks Celery chopped

4 sprigs Fresh thyme

8 cups Chicken broth

1 bunch Collard greens Stems discarded and leaves cut

1 tablespoon Red wine vinegar

Salt and pepper to taste


Directions

1. Combine beans, sausage, onion, celery, and thyme in slow cooker. Add broth and stir to combine. 2. Cover and cook until beans are tender on low for 7-8 hrs or on high for 4-5 hrs. 3. Twenty min before serving, discard thyme stems, add greens. Cover and cook until greens are tender, 15-20 min. Add vinegar and salt and pepper to taste.
