Smoked Paprika & Tomato Relish

A beautifully flavoured relish to enjoy with smoked meats, cheeses or stir through gnocchi or pasta. Make sure the jars are well sterilised by cleaning well in hot soapy water, rinsed in hot water & then dried in a 100 degree C oven.

Ingredients

2 medium Onions Roughly chopped

3 large Garlic cloves Roughly chopped

2 large Red bell pepper Roughly chopped

1 large Red chile Deseeded & chopped

1 kg Tomatoes Chopped

2 cups White wine vinegar

1 1/2 cups Brown sugar Firmly packed

2 teaspoons Sweet smoked paprika

1/2 teaspoon Salt

2 each Bay leaves

1 each Cinnamon stick Whole

2 each Star anise Whole

12 each peppercorns Whole

12 each Cloves Whole


Directions

Tie bay leaves, cinnamon stick, star anise, peppercorns and cloves into a muslin bag using kitchen string to secure. Place chopped red bell pepper, onions, garlic and chilli in a food processor and pulse until finally chopped. Put the vegetables, tomatoes, vinegar, sugar, paprika, salt and the muslin bag into a heavy-based large pot. Bring slowly to the boil, stirring to ensure all the sugar is dissolved. Simmer, uncovered, for 1 to 1 1/2 hours until the relish is thick and pulpy, stirring occasionally. Remove the spice bag and squeeze well to release the spicy juices. Ladle the relish into the hot sterile jars, wipe the jar tops with a very clean cloth and then put the lids on. Label and keep in a cool dark place. Will keep for about six months.

Hi I’m in Melbourne I made this today for my family :) I’m a lover of cooking with my career cooking is what grounds me . I work in trauma . This was easy to follow so yum I seperated into 3 containers with lids to give to our son in law and two for us . I added when completed I added fetta cheese and touch olive oil then spritz in our blender oh my gosh delicious then in fridge sets beautifully . I boiled my homemade pasta shell’s tonight for dinner added 2 tablespoons of this relish to pasta sauce added cream a dash and half block grated tasty cheese oh my gosh I’m in heaven every one I highly recommend you make this it’s so delicious. This is a keeper for us . I grow chilli at home was beautiful to add my home grown fresh ingredients. Thank you for such beautiful recipe .
