Ingredients

1.5 Pounds Velveeta Cheese

1 Pound Gouda Cheese

1 Pound Pepper Jack Cheese

2 Pounds Hot Sausage

28 Ounces Rotel

14 Ounces Cream of Chicken Soup

1/2 Cup Cilantro

1/2 Medium Red Pepper

1 Medium Onion

1/2 Medium Green Pepper

3 Medium Jalapenos

5 Medium Garlic Cloves

Salt

Pepper

2 Tablespoons Barbeque Rub

1/2 Cup Cilantro


Directions

1. Prepare your smoker at a temperature of 250 degrees. Heavy smoke wood such as oak, mesquite or hickory for this cook. 2. Cook the sausage in the Dutch oven over medium heat and then drain the the fat off. 3. Slice the Velveeta into 1" slices and cube the gouda into 1" squares. Load them in the Dutch oven. Then add the canned ingredients including all the liquid from the cans. 4. Add the Holy Voodoo. 5. Place the Dutch oven, uncovered, into your smoker for 1.5 Hours. Stir every 15 minutes. 6. Add the cilantro the last 5 mins of the cook preserving a little for garnish at the end. 7. Allow to cool and enjoy!
