Heat oven to 350
Butter springform pan. Mix breadcrumbs, 1/2 cup gruyere, and dill. Spread in bottom of pan and bake 12-15 minutes.
Melt butter and cook onion until golden and tender.
Mix cream cheese in food processor until smooth. Add eggs, remaining 3/4 cup gruyere, half and half, salmon, pepper, and onion (mixture will be lumpy). Fill springform pan. Place pan in a baking dish filled half with water. Bake 70 minutes. Let sit, out of the water, for 1 hour before serving.
