Prepare a brine of rock salt and water until a potato floats. Cut salmon in strips. Soak salmon in brine for 20 min. Put on smoker racks. Sprinkle with sugar and let sit overnight. Smoke until done rotating racks and turning racks. Start at 150 degrees until glassed over then increase temp.
