Sofrito Chicken Stew

Skinless chicken drumsticks, slowly stewed in light beer, scallions, tomatoes, cilantro, peppers, garlic and spices. As the colder weather slowly approaches in the coming months, this dish will warm your kitchen and hopefully give you the same comfort it gives me.

1/2 tbsp olive oil

6 scallions (chopped)

4 cloves garlic (chopped fine)

2 to matoes (diced)

1/3 cup diced red bell pepper

1 tsp ground cumin

1 1/2 tsp salt

1 packet sazón or 1 tsp annatto seed powder

Good. Made with boneless chicken thighs. Pre-salted per Samin Nosrat several hours before. Kept sofrito separate before browning chicken as in previous recipe this week with sofrito and ground beef, the remains of sofrito charred and burned when heating skillet high enough to brown meat. However, possibly the garlic powder charred when browning meat and gave a very acrid taste where blackened. consider adding the garlic powder after the meat is browned. Used 2 frozen cubes of sofrito. M liked
