Sopa De Pollo (Cuban Style Chicken Soup)

This is a great and hearty soup that always makes me feel better on those sick rainy days.

Ingredients

6 Chicken Thighs

1 medium Yellow Onion

1 tablespoon Oregano

1/4 teaspoon Saffron

6 cups of Water

2 cloves garlic

3 Cubes Chicken Bouillon

2 Potatoes

1 medium Carrot

1/2 Lemon Juiced

Salt and pepper To taste

1 tablespoon Tomato Paste


Directions

Remove skin from chicken thighs and lightly season with salt and pepper. In large pot add water, chicken, tomato paste, onion, bouillon, garlic, and oregano. Bring to a boil then reduce heat to low/Med. let simmer for 30 minutes. Add potatoes and carrots cover for another 30 minutes add saffron, lemon juice, and salt & pepper. You can add noodles if you like

If you are looking for an authentic Cuban recipe for chicken noodle soup, unfortunately this is not the one. The soup was only okay, and it did not taste like authentic Cuban chicken noodle soup at all. Very bland and boring, and it was too lemony, despite having used the exact quantity of lemon juice called for in the recipe. I wouldn't make this soup again.

The receipi was great. The only things I would change are vegetables, which one decides what to use by preference . I added sweet potatoes and replaced the tomato paste and used tomato sauce and added some fresh tomatoes. Loved this receipi, one can tweak it to personalize. But it's perfect!

Wow! I really liked this soup. I made broth with leftover whole roasted chicken and I took the advice of another reviewer and used sweet potato. Also subbed lime juice because I had an excess of limes and lime seemed authentic. The seasoning I used was straight from this recipe. I like the versatility and am adding this to my faves.

It came out great! Used a little less lemon juice, per one of the reviews. . But over all definitely a recipe I am adding to my list of regulars. ;)

Made some alterations based on the reviews and was more specific about quantities. Oh, and omitted the expensive saffron. Here's what I did differently: - 3 Yukon Gold potatoes cubed - 3 cloves garlic, chopped - a teaspoon or so of turmeric - Salt and pepper to taste - 3 cubes of chicken bullion Added some pasta and it turned out great. bullion
