1 Onion Chopped
1 1/2 Tsp Garlic Minced
3/4 Cup Quinoa Uncooked
1 Tsp Cumin
1 1/2 Cups Vegetable broth
1/4 Tsp Cayenne pepper
1 Tbsp Lime Juice
1 Can Chickpeas (or corn) Drained and rinsed (I use chickpeas to decrease carbs and GMO's)
2-15oz Cans Black beans Drained and rinsed
1/2 Cup Fresh Cilantro Chopped
1 Ripe avocado Diced
1/2 Tsp Salt To taste
Pepper To taste
This is so so yummy! I’m not a vegan but this is an awesome healthy dinner option. I added some bell peppers and Definitely could add some tomatoes next time! I would totally make this again!
emwhitakThis was tasty and nutritious! Ate it cold, with the avocado pieces on top I added a little extra lime and some hot sauce to spice it up a bit. Great recipe!

terp1993I made this with what I had on hand. .. quinoa, black beans & corn... no avocado. For spices I used garlic and Mrs Dash Caribbean Lime. It was delicious!
