Ingredients

8 ounce pancetta or bacon cut into thin strips

1/4 cup extra virgin olive oil

16 ounce thick spaghetti

4 Eggs slightly beaten

1 1/4 cup Romano cheese freshly grated

black pepper freshly ground; (to taste)


Directions

Bring a large pot of water to a boil. Cook pancetta in skillet, over medium heat, 5 to 6 minutes or until golden brown and crisp, stirring frequently. Add olive oil. Cook pasta according to package directions; drain and return to pot. Stir pasta into bacon mixture and cook over medium heat for 1 minute. Add eggs and cook 1 to 2 minutes until eggs are cooked, stirring constantly. Toss gently with cheese. Season to taste with black pepper. Transfer to serving platter

Cooked this tonight for my 10 year old. I didn't have the Romano cheese so used cheddar and mozzarella, but it came out a little bland. I added tons of black pepper, and ate mine, but my 10 year old likes his carbonara with the creamy carbonara sauce, so I think I'll have to look up another type of carbonara (are there different ways of cooking it?) This was OK, nice and simple to cook, fine for folks who don't like their pasta swamped by sauces... but not tasty enough for 5 stars I'm afraid.

Excellent. I added an onion and white mushrooms with the pancetta. This recipe is for purists!
